Spicy Garlic Cheddar Steak Bites with Tortellini in Garlic Cream
Ingredients:
1 ½ lbs sirloin or ribeye steak, cut into bite-sized cubes
1 tablespoon olive oil
3 tablespoons unsalted butter
4 garlic cloves, minced
1 teaspoon smoked paprika
1 teaspoon Cajun seasoning
½ teaspoon crushed red pepper flakes
Salt and freshly ground black pepper, to taste
Fresh parsley, chopped (for garnish)
12 oz cheese tortellini
2 tablespoons unsalted butter
3 garlic cloves, minced
1 ½ cups heavy cream
1 cup whole milk
1 ½ cups shredded sharp cheddar cheese
½ cup Parmesan cheese, freshly grated
½ teaspoon Italian seasoning
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Directions:
1. Bring a pot of salted water to a boil. Cook tortellini until tender, then drain and set aside.
2. In a large skillet, melt 2 tablespoons butter over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds. Pour in the heavy cream and milk, stirring to combine. Reduce heat and stir in cheddar and Parmesan until smooth and creamy. Season with Italian seasoning, salt, and pepper. Add the tortellini and toss until fully coated in the garlic cream sauce.
3. Pat steak bites dry and season with salt, black pepper, paprika, Cajun seasoning, and red pepper flakes. Heat olive oil in a cast-iron skillet over medium-high heat. Add the steak in a single layer and sear for 2–3 minutes per side until browned. Lower heat, add butter and garlic, and toss the steak bites in the garlic butter for 1–2 minutes, spooning butter over the steak for extra flavor.
4. Serve the garlic cream tortellini on one side and the spicy garlic cheddar steak bites on the other. Drizzle extra garlic butter over the steak and garnish with parsley.
