QUICK AND SPICY SHRIMP SOUP
Ingredients:
1 lb medium shrimp, peeled and deveined
1 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 bell pepper, diced
1 medium carrot, peeled and sliced
1 can (14 oz) diced tomatoes
3 cups low-sodium chicken broth
1 tsp chili powder
½ tsp smoked paprika
½ tsp cayenne pepper (adjust to taste)
1 tsp ground cumin
1 tbsp fresh lime juice
2 tbsp fresh cilantro, chopped (optional)
Salt and pepper, to taste
Optional: 1-2 fresh chili peppers, finely chopped (for extra spice)
Directions:
Prepare the Ingredients:
Chop the onion, garlic, bell pepper, and carrot. Set aside.
Peel and devein the shrimp if not already done.
Cook the Soup Base:
Heat olive oil in a large pot over medium heat.
Add the chopped onion and sauté for 2-3 minutes until softened.
Stir in garlic, bell pepper, and carrot, cooking for another 3-4 minutes until slightly tender.
