Full English Breakfast
Ingredients:
4 slices of bread
1 cup baked beans (canned or homemade)
4 chicken sausages
2 medium tomatoes
8 mushrooms
4 large eggs
1 tablespoon oil
1 tablespoon butter
Salt, to taste
Black pepper, to taste
2 spring onions (optional, for garnish)
Instructions:
Heat the beans: Warm the baked beans in a small saucepan over low heat. If making from scratch, simmer cooked white beans with tomato sauce, onions, garlic, and a bit of sweetener like molasses or brown sugar until thick.
Toast the bread: Toast the slices in a dry skillet or toaster. For extra flavor, pan-fry them in butter until golden and crisp. Set aside.
Cook the sausages: In a large frying pan, heat a bit of oil over medium heat. Add the sausages and cook until browned and cooked through, about 8–10 minutes depending on size.
Sear tomatoes and mushrooms: In the same pan, add halved tomatoes and mushrooms. Cook for about 5 minutes until the mushrooms are golden and tomatoes are slightly charred. Push them to one side of the pan.
Fry the eggs: Add butter to the pan if needed, then crack in the eggs. Fry on low heat until the whites are set and the yolks remain runny, or cook to your preferred doneness. Season with salt and pepper.
Assemble your plate: Arrange the sausages, eggs, toast, beans, mushrooms, and tomatoes neatly on a plate. Garnish with chopped spring onions if using, and serve right away.
Notes:
Use canned beans for convenience or make your own for better flavor control.
Substitute vegetarian sausages for a meat-free option.
Cook eggs gently on low heat to avoid overcooking.
A cast-iron pan gives great color and texture to sausages and vegetables.
