Keto Fathead Pan Pizza (12" — 8 slices)
Crust
1¾ cups shredded low-moisture mozzarella (about 175 g)
¾ cup fine almond flour (about 75 g)
2 Tbsp cream cheese
1 large egg
1 tsp baking powder
½ tsp garlic powder, ½ tsp kosher salt
Toppings (use what you like)
⅓–½ cup no-sugar-added marinara
1½ cups shredded mozzarella
½ lb Italian sausage, browned & drained
⅓ cup sliced black olives
2 Tbsp grated Parmesan, pinch oregano/red-pepper flakes
Instructions
Heat oven to 475°F (245°C) with a stone or inverted sheet pan heating inside.
Microwave mozzarella and cream cheese in a bowl 60–90 sec until melted; stir smooth.
Add almond flour, baking powder, garlic powder, and salt. Mix, then knead in the egg until a smooth dough forms.
Place dough on parchment. Oil hands and press/roll to a 12-inch round (¼" thick). Dock with a fork.
Slide parchment onto the hot stone/sheet and bake 8–10 min until golden; flip and bake 2–3 min more.
Top with sauce, half the cheese, sausage, olives, then remaining cheese and Parmesan.
Bake 6–8 min until bubbly; broil 1–2 min for browned spots. Rest 5 min, slice, and serve.
