White Chocolate Strawberry Cheesecake
Ingredients:
2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
24 oz cream cheese, softened
1 cup granulated sugar
3 large eggs
1 teaspoon pure vanilla extract
8 oz white chocolate, melted and cooled
1 cup heavy cream, whipped
2 cups fresh strawberries, sliced
Extra whole strawberries for topping
1/2 cup crushed graham crackers for garnish
Directions:
Preheat oven to 325°F (160°C).
In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Chill for 10 minutes.
In a large bowl, beat cream cheese and sugar until smooth. Add eggs, one at a time, beating after each. Stir in vanilla extract and melted white chocolate.
Fold in half of the whipped cream gently.
Pour the filling over the crust. Arrange the sliced strawberries along the sides inside the pan.
Bake for 55-60 minutes or until the center is almost set. Cool completely, then chill in the fridge for at least 4 hours or overnight.
Top with remaining whipped cream, whole strawberries, and sprinkle with crushed graham crackers before serving.
