Mediterranean Meatball Bowl with Bulgur & Creamy Sauce 🧆🥗
Ingredients:
For the Meatballs:
1 lb ground beef
1/2 cup breadcrumbs
1/4 cup chopped onion
2 cloves garlic, minced
1 egg
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
For the Roasted Vegetables:
1 zucchini, sliced
1 yellow squash, sliced
1 red onion, sliced
1 cup cherry tomatoes
1 tablespoon olive oil
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
For the Creamy Sauce:
1/2 cup Greek yogurt
1 cucumber, peeled and grated
2 cloves garlic, minced
1 tablespoon lemon juice
1 tablespoon chopped dill
Salt and pepper to taste
For the Bowl:
1 cup cooked bulgur
1/2 cup crumbled feta cheese
Kalamata olives, for garnish
Instructions:
Make the Meatballs: In a large bowl, combine ground beef, breadcrumbs, onion, parsley, garlic, egg, salt, pepper, oregano, and thyme. Mix well until just combined. Form into 1-inch balls.
Roast the Vegetables: Toss vegetables with olive oil, paprika, garlic powder, salt, and pepper. Roast at 400°F (200°C) for 20-25 minutes, or until tender-crisp.
Cook the Meatballs: Grill or pan-fry the meatballs until cooked through.
Make the Creamy Sauce: In a bowl, combine Greek yogurt, cucumber, garlic, lemon juice, dill, salt, and pepper. Mix well.
Assemble the Bowls: Divide bulgur between bowls. Top with grilled meatballs, roasted vegetables, feta cheese, and drizzle with Creamy Sauce. Garnish with olives.
