Ingredients:
1 box vanilla cake mix (plus ingredients listed on the box)
2 cups vanilla ice cream (softened)
1 Β½ cups raspberry sorbet (softened)
1 cup fresh raspberries
1 cup whipped cream
ΒΌ cup raspberry jam
1 tsp lemon zest
Fresh mint leaves (optional, for garnish)
Instructions:
Bake the Vanilla Cake:

Prepare the vanilla cake mix as instructed on the box. Let it cool completely.
Prepare the Raspberry Swirl:

In a small bowl, mix the raspberry jam with lemon zest. Set aside.
Layer the Ice Cream & Sorbet:

Line a cake pan with plastic wrap. Spread half of the softened vanilla ice cream at the bottom, followed by dollops of the raspberry jam mixture. Gently swirl it through the ice cream with a spoon or knife. Freeze for 30 minutes.
Add the softened raspberry sorbet on top, smoothing it out evenly. Freeze for 1 hour until firm.
Assemble the Cake:

Place the cooled vanilla cake layer on a serving dish. Remove the frozen ice cream and sorbet layers from the pan and place them on top of the cake.
Final Touches:

Spread whipped cream on top of the cake. Add fresh raspberries and drizzle extra raspberry jam for a decorative effect.
Garnish with mint leaves, if desired.
Freeze & Serve:

Freeze the assembled cake for at least 2 hours. Slice and enjoy the refreshing raspberry swirl!
