GARLIC BUTTER LOBSTER WITH GARLIC MASHED POTATOES

INGREDIENTS
For the Garlic Butter Lobster:

4 lobster tails, thawed if frozen
1/2 cup (1 stick) unsalted butter
6 garlic cloves, minced
1 tablespoon fresh lemon juice
1 teaspoon fresh parsley, chopped (optional)
Salt and pepper to taste
1 tablespoon olive oil (for searing)
For the Garlic Mashed Potatoes:

2 lbs Yukon Gold potatoes, peeled and diced
4 garlic cloves, peeled
1/2 cup heavy cream
4 tablespoons unsalted butter
Salt and pepper to taste
Fresh parsley for garnish (optional)
INSTRUCTIONS
For the Garlic Butter Lobster:

Prepare the Lobster Tails:
Use kitchen shears to cut the top shell of the lobster tails lengthwise, exposing the meat. Gently pull the lobster meat out of the shell, leaving the end attached to the tail. Rest the lobster meat on top of the shell.
Cook the Lobster:
In a skillet, melt butter over medium heat. Add the minced garlic and sauté for 1–2 minutes, until fragrant.
Add the lobster tails to the skillet, flesh side down. Sear the lobster for about 2–3 minutes until it’s golden brown.
Flip the lobster tails over, add lemon juice, season with salt and pepper, and cook for an additional 3–4 minutes, until the lobster is fully cooked (opaque and firm).
Remove from heat and drizzle with some of the garlic butter from the pan. Garnish with fresh parsley.
For the Garlic Mashed Potatoes:

Boil the Potatoes:
In a large pot, combine the diced potatoes and garlic cloves. Cover with water and bring to a boil over high heat.
Reduce to a simmer and cook for about 12–15 minutes, or until the potatoes are tender and can be easily pierced with a fork.
Mash the Potatoes:
Drain the potatoes and garlic, then return them to the pot. Add butter, heavy cream, salt, and pepper to taste.
Use a potato masher or a hand mixer to mash the potatoes until smooth and creamy.
Adjust seasoning as needed and garnish with fresh parsley if desired.
To Serve:

Place the garlic butter lobster tails on a plate next to a generous scoop of creamy garlic mashed potatoes.
Drizzle some of the remaining garlic butter over the lobster and potatoes for extra flavor.
