Banana Bread Cake with Cream Cheese Frosting
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 cup mashed ripe bananas (about 3 bananas)

- 1 teaspoon vanilla extract
For the Cream Cheese Frosting:
- 8 ounces cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Directions:
1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
3. In a large bowl, cream the butter and sugar together until light and fluffy.
4. Beat in the eggs one at a time, followed by the mashed bananas, sour cream, and vanilla extract.
5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
6. Pour the batter into the prepared cake pan and smooth the top.
7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
9. While the cake cools, prepare the frosting: beat together cream cheese and butter until smooth.
10. Gradually add powdered sugar and vanilla extract, beating until creamy and spreadable.
11. Once the cake is completely cooled, frost the top evenly with the cream cheese frosting.
