Healthy Chicken Noodle Stir-Fry
Ingredients:
2 cups cooked whole wheat noodles
1 pound boneless, skinless chicken breast, sliced into thin strips
2 tablespoons olive oil
1 cup broccoli florets
1 cup bell peppers, sliced (any color)
1 cup snap peas
2 cloves garlic, minced
1 tablespoon fresh ginger, minced
3 tablespoons low-sodium soy sauce
1 tablespoon honey
1 teaspoon sesame oil
Salt and pepper to taste
2 green onions, sliced (for garnish)
Sesame seeds (for garnish, optional)
1. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the sliced chicken breast and season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is cooked through and no longer pink. Remove the chicken from the skillet and set aside.
2. In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.
3. Add the broccoli, bell peppers, and snap peas to the skillet. Stir-fry the vegetables for about 4-5 minutes, or until they are tender-crisp.
4. Return the cooked chicken to the skillet. Pour in the soy sauce, honey, and sesame oil. Stir everything together and cook for an additional 2-3 minutes, allowing the sauce to coat the chicken and vegetables evenly.
5. Serve the stir-fry over the cooked whole wheat noodles. Garnish with sliced green onions and sesame seeds if desired.
