- 1 package lemon gelatin
- 1 cup boiling water
- 1 cup cold water
- 1 cup whipped cream
- 1 cup cottage cheese
- 1 cup crushed pineapple (drained)
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- Lemon zest (for garnish)
📝 Instructions
1. In a bowl, dissolve the lemon gelatin in boiling water.
2. Stir in the cold water and refrigerate until slightly thickened.
3. In another bowl, mix the whipped cream, cottage cheese, crushed pineapple, sugar, and vanilla extract.
4. Once the gelatin mixture is thickened, fold it into the cream mixture until well combined.
5. Pour the mixture into a serving dish and refrigerate until set, about 2-3 hours.
6. Garnish with lemon zest before serving.
