🍩 Cinnamon Sugar Donut Muffins 🧁
Ingredients
For the Muffins:
1 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
½ teaspoon ground nutmeg
1 teaspoon ground cinnamon
⅓ cup vegetable oil
¾ cup white sugar
1 large egg
¾ cup milk
For the Coating:
6 tablespoons melted butter
½ cup white sugar
1 ½ teaspoons ground cinnamon
Instructions
Preheat your oven to 350°F (175°C). Grease or line a standard 12-cup muffin tin.
In a medium bowl, whisk together the flour, baking powder, salt, nutmeg, and one teaspoon of cinnamon.
In a separate, larger bowl, combine the vegetable oil, ¾ cup of sugar, and the egg. Whisk until the mixture is smooth and pale yellow.
Pour the dry flour mixture into the wet sugar mixture, then pour in the milk. Stir gently with a spatula until the ingredients are just combined; do not overmix. A few lumps are perfectly fine.
Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
Bake for 18-22 minutes, or until the tops are lightly golden and a toothpick inserted into the center of a muffin comes out clean.
While the muffins bake, prepare the coating. Place the ½ cup of sugar and 1 ½ teaspoons of cinnamon in a small bowl and stir to combine. Place the melted butter in another small bowl.
As soon as the muffins are cool enough to handle but still warm, carefully remove them from the tin. Dip the top and sides of each muffin first into the melted butter, then immediately roll it in the cinnamon-sugar to coat completely.
Place the coated muffins on a wire rack to set for a few minutes before serving.
