Vanilla Pecan Pralines
Ingredients:
- 2 cups granulated sugar
- 1 cup light brown sugar, packed
- 1/2 cup heavy cream
- 4 tablespoons unsalted butter
- 1 1/2 teaspoons vanilla extract
- 2 cups pecan halves
- Pinch of salt
Directions:
1. Line a baking sheet with parchment paper or a silicone mat and set aside.
2. In a heavy-bottomed saucepan, combine granulated sugar, brown sugar, and heavy cream over medium heat. Stir continuously until the sugars dissolve completely.
3. Bring the mixture to a boil and let it cook without stirring until it reaches the soft-ball stage (238°F/114°C) on a candy thermometer. Remove from heat immediately.
4. Stir in the butter, vanilla extract, pecans, and a pinch of salt. Continue stirring vigorously until the mixture thickens and loses its glossy sheen, about 5-7 minutes.
5. Quickly drop spoonfuls of the praline mixture onto the prepared baking sheet before it hardens. Allow to cool completely at room temperature.
