Loaded Keto Cauliflower Casserole
Ingredients
1 large head of cauliflower (cut into florets, about 4 cups)
1 cup sour cream
4 oz cream cheese, softened
1 1/2 cups shredded cheddar cheese (divided)
1/2 cup mozzarella cheese
1/4 cup grated Parmesan
4 slices bacon, cooked and crumbled (or 1/3 cup bacon bits)
2 green onions, chopped
1 tsp garlic powder
Salt & pepper to taste
Instructions
Preheat oven to 375°F (190°C). Grease a 9x9 baking dish.
Cook cauliflower: Steam or boil florets until fork-tender (about 8–10 minutes). Drain well and pat dry to remove excess water.
Make the base: In a large bowl, mash the cauliflower slightly (leave some chunks). Mix in sour cream, cream cheese, garlic powder, salt, pepper, half the cheddar, mozzarella, and Parmesan.
Assemble: Spread mixture into baking dish. Top with remaining cheddar, crumbled bacon, and green onions.
Bake uncovered for 20–25 minutes, until cheese is bubbly and golden on top.
Serve hot as a side dish or main course.
