Avocado Egg Salad Bowl
Ingredients:
2 boiled eggs, halved
1/2 avocado, sliced
1/2 cup cherry tomatoes, halved
1/2 cup sweet corn
2 tbsp chopped red onion
Chopped green bell pepper
Fresh cilantro & feta cheese
Paprika, salt & black pepper to taste
Instructions:
1. Arrange all ingredients in a bowl.
2. Season with paprika, salt, and pepper.
3. Garnish with cilantro and crumbled feta.
4. Serve fresh as a protein-packed lunch or light dinner!
