Smoked Salmon Salad with Capers & Dill Vinaigrette
**Ingredients:
- 8 oz smoked salmon (lox), thinly sliced
- 1 red onion, thinly sliced
- 2 lemons, thinly sliced into rounds (seeds removed)
- 2 tbsp capers
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1/2 tsp honey
- Salt & pepper, to taste
- Fresh dill, chopped (for garnish)
**Directions:
1. Make the Vinaigrette:
In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, salt, and pepper until well combined.
2. Assemble the Salad:
On a serving platter or plate, layer the smoked salmon, red onion slices, lemon rounds, and capers.
Drizzle the vinaigrette over the top.
3. Garnish:
Sprinkle with chopped fresh dill. Add extra cracked pepper or lemon zest if you like.
**Serving Suggestions:
- Serve with toasted bagels, rye bread, or crackers
- Great alongside cream cheese or whipped goat cheese
- Can be served chilled or room temp
