Roasted Garlic Salmon with Spinach Alfredo Penne
Creamy Spinach Alfredo Penne with Oven-Roasted Garlic Salmon
Ingredients:
2 salmon fillets (about 6 oz each)
1 tablespoon olive oil
4 cloves garlic, minced
1/2 teaspoon paprika
1/2 teaspoon sea salt
1/4 teaspoon black pepper
8 oz penne pasta
1 tablespoon butter
1 tablespoon all-purpose flour
1 1/2 cups milk (or unsweetened almond milk)
1/2 cup grated Parmesan cheese
2 cups fresh spinach, roughly chopped
1/4 teaspoon nutmeg (optional)
Directions:
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Rub the salmon fillets with olive oil, garlic, paprika, salt, and pepper. Place on the prepared sheet and roast for 12–15 minutes, or until flaky.
While the salmon roasts, cook the penne pasta according to package instructions. Drain and set aside.
In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
Gradually whisk in the milk, stirring constantly until it thickens. Add Parmesan and stir until melted and smooth.
Stir in chopped spinach and cook until wilted. Add nutmeg if using.
Combine the sauce with the cooked penne and gently toss.
Plate the creamy spinach penne and top with the roasted garlic salmon. Garnish with extra cheese or fresh herbs if desired.
