Charred Broccolini with Burrata, Nduja & Almonds
**Ingredients:
- 1 pack broccolini
- 1 clove garlic, finely sliced
- 1 tsp lemon zest
- 1 handful fresh parsley, chopped
- 1 handful almonds, toasted and roughly chopped
- 1 tbsp butter
- 2 burrata balls
- 50 g nduja (a spicy, spreadable pork salami)
**Directions:
1. Blanch the Broccolini (Optional for Tenderness):**
- Bring a pot of salted water to a boil. Blanch broccolini for 1 minute, then drain and pat dry.
2. Toast the Almonds:
- In a dry skillet over medium heat, toast almonds until golden and fragrant. Remove and set aside.
3. Sauté & Char the Broccolini:
- In the same skillet, melt butter over medium-high heat.
- Add garlic slices and cook briefly (about 30 seconds) until just golden.
- Add broccolini and cook until charred and tender, turning occasionally (about 5–7 minutes).
- Stir in nduja until melted through and coating the broccolini.
4. Assemble the Dish:
- Place warm broccolini on a serving plate.
- Tear burrata and nestle over the top.
- Sprinkle with lemon zest, chopped parsley, and toasted almonds.
- Drizzle with any leftover nduja butter from the pan.
**Servings: 2–3 as a main plate, 4+ as a side or starter
