The Best Potato Salad I’ve Ever Had!
Ingredients:
5 medium Yukon Gold potatoes, cubed
3 hard-boiled eggs, chopped
½ cup mayonnaise
2 tbsp sour cream
1 tbsp Dijon mustard
2 tbsp sweet pickle relish
¼ cup diced celery
¼ cup chopped green onion
Salt & pepper to taste
Paprika for garnish
Directions:
Boil potatoes in salted water until just fork-tender (about 10–12 minutes). Drain and let cool.
In a large bowl, mix mayo, sour cream, mustard, relish, salt, and pepper.
Add potatoes, eggs, celery, and green onion. Mix gently to combine.
Chill for at least 2 hours before serving.
Sprinkle with paprika just before serving.
