Slow-Cooked Beef Magic Medallions
Ingredients:
- 2 pounds beef sirloin, cut into 1-inch thick medallions
- 1 large onion, sliced
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon black pepper
- 1 teaspoon salt
- 2 tablespoons olive oil
- 2 cups baby carrots
- 2 cups baby potatoes, halved
- Fresh parsley, chopped (for garnish)
Instructions:
1. First things first, heat up that olive oil in a large skillet over medium-high heat. You want to sear those beef medallions until they're nice and brown on both sides, about 3-4 minutes per side. This is where the magic starts, folks!
2. Once they’re browned, transfer those medallions to your slow cooker. In the same skillet, toss in the sliced onions and minced garlic, sautéing until they're soft and fragrant, about 2-3 minutes.
3. Now, pour in the beef broth and Worcestershire sauce, scraping up any tasty bits stuck to the bottom of the skillet. Add in the thyme, rosemary, black pepper, and salt. Stir it all together, then pour this mixture over the beef in the slow cooker.
4. Next, toss in the baby carrots and halved potatoes right on top of the beef. Give it a gentle stir to combine everything, but don’t go crazy; we want those medallions to stay intact!
5. Cover that slow cooker and set it to low for about 6-8 hours, or high for 4-5 hours. You want that beef to be fork-tender and full of flavor!
6. When it’s done, serve those medallions and veggies on a plate, and sprinkle some fresh parsley on top for a pop of color.
