Parmesan Herb-Crusted Beef Tenderloin
Ingredients (Serves 6–8)
2½–3 lbs beef tenderloin (trimmed and tied)
2 tbsp olive oil
2 tsp salt
1 tsp black pepper
4 cloves garlic, minced
2 tbsp fresh rosemary, finely chopped (or 1 tbsp dried rosemary)
2 tbsp fresh thyme, finely chopped (or 1 tbsp dried thyme)
1 cup grated Parmesan cheese (freshly grated works best)
½ cup breadcrumbs (preferably panko for extra crispness)
2 tbsp Dijon mustard
2 tbsp butter, softened
1 tbsp olive oil (for brushing)
Instructions
1. Preheat the oven:
Preheat your oven to 400°F (200°C).
2. Prepare the beef:
Pat the beef tenderloin dry with paper towels to remove any moisture.
Rub the tenderloin all over with olive oil, then season generously with salt and black pepper.
3. Make the herb crust:
In a small bowl, combine the garlic, rosemary, thyme, Parmesan, breadcrumbs, and softened butter. Mix well to form a paste-like mixture.
4. Apply the crust:

Transfer the beef to a roasting pan or baking sheet. Roast in the preheated oven for 35–40 minutes for medium-rare (or 45–50 minutes for medium). The internal temperature should reach 125°F (52°C) for medium-rare or 135°F (57°C) for medium.
Tip: For more accurate results, use a meat thermometer to ensure your beef is cooked to your desired level of doneness.
7. Rest the meat:
Once the beef is cooked, remove it from the oven and let it rest for 10–15 minutes. Resting allows the juices to redistribute for a more tender and flavorful cut of meat.
8. Slice and serve:
Slice the beef into 1-inch thick medallions and serve with your favorite sides, such as roasted vegetables, mashed potatoes, or a fresh salad.
