Salt & cracked black pepper, to taste
1 tbsp olive oil
2 tbsp unsalted butter
3 cloves garlic, smashed
2 sprigs fresh rosemary or thyme

4 tbsp unsalted butter, softened
1 clove garlic, minced
1 tbsp fresh parsley, finely chopped
1/2 tsp lemon zest
Pinch of salt
Suggested Sauces (optional):
Chimichurri
Spicy BBQ sauce
Honey mustard
🔥 Instructions:1️⃣ Season & Rest:
Pat the steaks dry with paper towels.
Season generously on both sides with salt and cracked black pepper. Let them sit at room temperature for 20–30 minutes before cooking.
2️⃣ Make the Garlic Herb Butter:
In a small bowl, mix softened butter, garlic, parsley, lemon zest, and salt.
Set aside or refrigerate to firm up.
3️⃣ Sear the Steak:
Heat a cast-iron skillet or grill pan over high heat until smoking.
Add olive oil, then the steaks.
Sear 3–4 minutes per side for medium-rare (adjust for your desired doneness).
In the last 2 minutes of cooking, add butter, garlic, and rosemary.
Tilt the pan and spoon the melted butter over the steak repeatedly.
4️⃣ Rest & Slice:
Remove steaks and let them rest for 5–10 minutes on a cutting board.
Slice against the grain for maximum tenderness.
5️⃣ Serve with Style:
Plate with a dollop of garlic herb butter on top.
Add rosemary sprigs for garnish.
Offer sauces on the side for dipping.
🥩 Pro Tips:
Use a meat thermometer:
Medium-rare = 130–135°F (54–57°C)
Medium = 140–145°F (60–63°C)
Letting the meat rest is crucial for juicy steak!
