Chocolate M&M's & Cookie Dough Ice Cream Cake (with Vanilla & Cookies n' Cream Ice Cream)
Ingredients
For the Cookie Dough Base:
- 1 cup M&M's (or more, depending on your preference)
- 3/4 cup packed brown sugar
- 1/2 cup unsalted butter, softened
- 1 cup semisweet chocolate chips (or chopped chocolate)
- 1/4 teaspoon salt
- 1/4 cup granulated sugar
- 1 1/4 cups all-purpose flour
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips
For the Ice Cream Layers:
- 1/2 gallon chocolate ice cream, softened (or your favorite flavor)
- 1/2 gallon vanilla ice cream, softened (or your favorite flavor)
For the Chocolate Topping:
- 1 cup heavy cream
- 1 cup semisweet chocolate chips
Instructions
Step 1: Prepare the Cookie Dough Base
1.1. In a bowl, cream together the brown sugar and softened butter until smooth.
1.2. Mix in the vanilla extract and salt.
1.3. Gradually add the flour and fold in the mini chocolate chips and M&M's.
1.4. Press this mixture into the bottom of a 9x13-inch baking dish to form the cookie dough base.
Step 2: Layer with Ice Cream
2.1. Spread the softened chocolate ice cream over the cookie dough base evenly.
2.2. Freeze for about 30 minutes to set the first layer.
2.3. Spread the softened vanilla ice cream over the chocolate layer.
2.4. Freeze for another 30 minutes to set the second layer.
Step 3: Make the Chocolate Topping
3.1. In a saucepan, melt the semisweet chocolate chips with the heavy cream over low heat until smooth.
3.2. Pour this chocolate mixture over the vanilla ice cream layer.
3.3. Sprinkle additional M&M's on top for decoration.
Step 4: Freeze and Serve
4.1. Cover the cake with plastic wrap and freeze for at least 4 hours or overnight until firm.
4.2. When ready to serve, let the cake sit at room temperature for a few minutes to soften slightly.
