One-Pot Spicy Garlic Butter Chicken Tortellini
Ingredients:
1 lb boneless, skinless chicken breast (cut into bite-sized pieces)
2 tablespoons olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon red pepper flakes (adjust to taste)
1 teaspoon smoked paprika
Salt & black pepper, to taste
1 (20 oz) package refrigerated cheese tortellini
1½ cups chicken broth
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1 cup baby spinach (optional)
Fresh parsley, chopped (for garnish)
Directions:
Heat olive oil in a large skillet over medium heat. Add chicken, season with salt, pepper, and smoked paprika. Cook until browned and fully cooked, 5–7 minutes. Remove from skillet and set aside.
In the same skillet, melt butter. Add garlic and red pepper flakes, sauté for 1 minute until fragrant.
Add the chicken broth and bring to a simmer. Stir in the tortellini and cook uncovered for 6–8 minutes, stirring occasionally until tender.
Reduce heat, stir in heavy cream and Parmesan cheese. Cook for 2 more minutes until the sauce thickens.
Return the chicken to the skillet. Add spinach (if using), and stir until wilted.
Garnish with parsley and serve hot.
