Hot Honey Halloumi and Mint Tacos

250g Halloumi
8 mini tortillas
2 avocados
60g arugula (rocket)
50g pomegranate seeds
1 heaped teaspoon harissa
2 tbsp honey
1 tsp red pepper flakes
ΒΌ cup Greek yogurt (60ml)
10g mint, chopped
Directions:
1. Slice avocados in half, remove the seed, scoop out the insides, and mash onto a plate.
2. Mix Greek yogurt and chopped mint in a bowl to make mint yogurt.
3. Thinly slice halloumi into strips, ensuring they are thick enough to hold together during frying.
4. In a bowl, combine harissa, honey, and red pepper flakes. Add halloumi slices and coat in the sauce.
5. Fry the halloumi on medium-high heat for 3-4 minutes on each side, until caramelized.
6. Toast tortillas in a dry pan or microwave for 30 seconds.
7. Assemble tacos by spreading avocado on each tortilla, adding arugula, halloumi slices, mint yogurt, and pomegranate seeds.
