Ingredients

• 2 pounds boneless beef short ribs
• 3 large yellow onions, thinly sliced
• 4 garlic cloves, minced
• 1 tablespoon olive oil
• ½ cup dry white wine
• 4 cups beef broth
• 2 sprigs fresh thyme
salt and pepper to taste

for the cheese toast
• 4 slices sturdy bread (like baguette or sourdough)
• 1 cup grated gruyère cheese
• a pinch of paprika or black pepper (optional)

Instructions
1. Preheat your oven to 325°F.
2. Heat olive oil in a large ovenproof pot over medium heat. Season the short ribs with salt and pepper and brown on all sides, about 3 minutes per side. Transfer to a plate.
3. Add onions to the pot and cook until soft and golden, about 10 minutes, stirring now and then.
