Herbed Salmon with Lemon Pea Pasta
Zesty Herbed Salmon over Lemon-Garlic Pea Pasta
Ingredients:
2 salmon fillets (about 6 oz each)
1 tablespoon olive oil
1 teaspoon dried dill
1 teaspoon dried parsley
1/2 teaspoon garlic powder
Salt and black pepper to taste
8 oz whole wheat pasta (penne or fusilli)
1 cup green peas (fresh or frozen)
Juice and zest of 1 lemon
1 tablespoon olive oil (for pasta)
2 cloves garlic, minced
1/4 cup chopped fresh basil
Optional: lemon slices and fresh herbs for garnish
Directions:
Preheat oven to 375°F (190°C).
Place salmon fillets on a lined baking tray. Rub with olive oil, then sprinkle with dill, parsley, garlic powder, salt, and pepper.
Bake for 15–18 minutes or until the salmon flakes easily with a fork.
Meanwhile, cook the pasta in salted boiling water according to package directions. Add the peas in the last 2 minutes of cooking. Drain and set aside.
In the same pot, heat 1 tablespoon olive oil over medium heat. Add minced garlic and sauté for 1 minute.
Add the drained pasta and peas back to the pot. Stir in lemon juice, zest, and chopped basil. Mix well to coat.
Plate the pasta and top with the baked salmon. Garnish with extra lemon zest, fresh herbs, or lemon slices if desired.
