Garlic Herb Tilapia with Avocado Penne
Pan-Seared Garlic Tilapia over Creamy Avocado Penne
Ingredients:
4 tilapia fillets
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and black pepper, to taste
Juice of 1 lemon
12 oz (340g) penne pasta
2 ripe avocados
1/4 cup plain Greek yogurt
2 tablespoons lemon juice
1/4 teaspoon garlic powder
1/4 cup chopped fresh parsley
Cherry tomatoes for garnish (optional)
Directions:
Cook the penne pasta in salted boiling water according to package instructions. Drain and set aside.
In a small bowl, mash the avocados and mix in Greek yogurt, lemon juice, garlic powder, and a pinch of salt. Blend until smooth and creamy.
Season the tilapia fillets with salt, pepper, oregano, thyme, and minced garlic.
Heat olive oil in a large skillet over medium heat. Add the tilapia and cook 3–4 minutes per side until golden and cooked through. Squeeze fresh lemon juice over the fillets while cooking.
Toss the cooked penne with the avocado sauce until evenly coated.
Serve the tilapia fillets on top of the creamy avocado penne, garnished with parsley and cherry tomatoes if desired.
