Cajun Chicken and Cheese Tortellini Skillet
Ingredients:
2 boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons Cajun seasoning
1 tablespoon olive oil
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
9 oz cheese tortellini (fresh or frozen)
1/2 cup diced tomatoes (canned or fresh)
1/4 cup fresh parsley, chopped
Salt and pepper to taste
Directions:
1. Season the Chicken: In a bowl, toss the chicken pieces with Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, and pepper.
2. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook, stirring occasionally, for about 6-8 minutes until the chicken is cooked through and browned. Remove the chicken from the skillet and set aside.
3. Prepare the Sauce: In the same skillet, pour in the chicken broth and bring to a simmer. Let it cook for 2-3 minutes to reduce slightly.

5. Cook the Tortellini: While the sauce is simmering, cook the tortellini according to package instructions. Drain and set aside.
6. Combine the Chicken and Tortellini: Return the cooked chicken to the skillet, followed by the cooked tortellini. Stir everything together to coat the chicken and pasta in the creamy sauce.
7. Finish and Serve: Add the diced tomatoes to the skillet, stirring gently to combine. Let everything simmer together for another 2-3 minutes. Sprinkle with chopped fresh parsley and extra Parmesan cheese if desired.
