Ingredients:

For the Cupcakes:

1 ½ cups all-purpose flour

1 ½ tsp baking powder

¼ tsp baking soda

¼ tsp salt

½ cup unsalted butter (room temperature)

¾ cup granulated sugar

2 large eggs (room temperature)

1 tbsp vanilla extract

½ cup sour cream (or plain Greek yogurt)

¼ cup milk (whole or 2%)

½ cup rainbow sprinkles (the long “jimmies” style, not nonpareils)

For the Vanilla Buttercream:

1 cup unsalted butter (room temperature)

3-4 cups powdered sugar (sifted)

2 tsp vanilla extract

2-4 tbsp milk or heavy cream

Pinch of salt

Extra sprinkles for decorating

Instructions:

1. Preheat Oven & Prepare Pan:
Preheat your oven to 350°F (175°C).

Line a 12-cup muffin tin with cupcake liners.

2. Make the Cupcake Batter:
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a large bowl, beat the butter and sugar together on medium speed until light and fluffy (about 3 minutes).

Add the eggs one at a time, beating well after each addition.

Mix in the vanilla extract.

Add the sour cream and milk, and mix until just combined.

Gradually add the dry ingredients to the wet ingredients and mix until just combined — do not overmix.

Gently fold in the rainbow sprinkles with a spatula.

3. Fill and Bake:
Divide the batter evenly among the cupcake liners, filling each about 2/3 full.

Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean.

Allow cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely before frosting.

4. Make the Vanilla Buttercream:
In a large bowl, beat the butter until creamy.

Gradually add the powdered sugar, 1 cup at a time, beating on low until combined.

Add the vanilla extract and 2 tablespoons of milk, and beat on high for about 2-3 minutes until fluffy. Add more milk if needed to adjust consistency.

Add a pinch of salt to balance the sweetness if desired.

5. Frost the Cupcakes:
Once cupcakes are completely cool, frost them using a piping bag or an offset spatula.

Decorate with extra rainbow sprinkles!
