Ingredients:
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 tsp baking soda
1/4 tsp salt
3/4 cup extra virgin olive oil
3/4 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 cup buttermilk
1/2 cup hot water
Instructions:
Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
Sift together flour, cocoa powder, baking soda, and salt.
In a large bowl, whisk olive oil and sugar until combined.
Add eggs one at a time, beating well, then stir in vanilla extract.
Mix in buttermilk until smooth.
Gradually add dry ingredients to wet ingredients, alternating with hot water. Stir until just combined.
Pour batter into prepared pan and bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
Cool in pan for 10 minutes, then transfer to a wire rack.
