Chocolate Eclairs 🍫🍰😋
Delicious and creamy chocolate eclairs that are sure to impress!
📋 Ingredients
- 1 cup water
- 1/2 cup butter
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 4 large eggs
- 2 1/2 cups cold milk
- 1 (5 ounce) package instant vanilla pudding mix
- 1 cup heavy cream
- 1/4 cup confectioners' sugar
- 1 teaspoon vanilla extract
- 2 (1 ounce) squares semisweet chocolate
- 2 tablespoons butter
- 1 cup confectioners' sugar
- 1 teaspoon vanilla extract
- 3 tablespoons hot water
📝 Instructions
1. Preheat the oven to 450 degrees F (230 degrees C). Grease a cookie sheet; set aside.
2. For the choux pastry, combine water and butter in a medium pot, bring to a boil, then reduce heat and add flour and salt. Stir until it forms a stiff ball and remove from heat.
3. Beat in eggs one by one until incorporated. Spoon or pipe onto cookie sheet in strips and bake for 15 minutes, then reduce heat to 325 degrees F (165 degrees C) and bake until hollow when tapped. Let cool on a wire rack.
4. For the filling, mix milk and pudding mix, beat heavy cream and fold into pudding. Fill cooled pastry with pudding.
5. For the icing, melt chocolate and butter, stir in sugar and vanilla, then add hot water to desired consistency. Drizzle over filled eclairs and refrigerate until serving.
