Easy Cottage Pie
Ingredients:
1 lb (500g) ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 carrot, diced
1 cup frozen peas
2 tbsp tomato paste
1 cup beef broth
1 tbsp Worcestershire sauce
1 tsp dried thyme
Salt and pepper, to taste
2 cups mashed potatoes (made with butter and milk)
½ cup shredded cheese (cheddar or parmesan)
Instructions:
Preheat oven to 375°F (190°C).
In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add onion, garlic, and carrot. Cook for 5 minutes until softened.
Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper. Add beef broth and simmer for 10 minutes. Stir in peas.
Transfer beef mixture to a baking dish. Spread mashed potatoes evenly on top.
Sprinkle cheese over mashed potatoes.
Bake for 25-30 minutes, until golden and bubbly.
Let rest for 5 minutes before serving. Enjoy!
