🍪 Homemade Banana Pudding Cookies 🍌
Ingredients:
For the cookie dough:
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 ripe bananas, mashed (about 3/4 cup)
2 cups all-purpose flour
1 package (3.4 oz) instant banana pudding mix
1/2 teaspoon baking soda
1/4 teaspoon salt
For the mix-ins:
2 cups white chocolate chips
1 cup crushed vanilla wafer cookies (about 12–15 cookies)
Instructions:
Preheat and prepare: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
Make the dough: In a large mixing bowl, cream the softened butter and sugar together until light and fluffy. Beat in the egg and vanilla extract until fully combined. Stir in the mashed bananas, ensuring the mixture is smooth and well incorporated.
Combine dry ingredients: In a separate bowl, whisk together the flour, instant banana pudding mix, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until the dough comes together. Be careful not to overmix.
Add mix-ins: Gently fold in the white chocolate chips and crushed vanilla wafer crumbs until evenly distributed throughout the dough.
Scoop and bake: Drop rounded tablespoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading. Bake for 10–12 minutes, or until the edges are lightly golden and the centers are set.
Cool and enjoy: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature for the best flavor and texture.
