Marshmallow Caramel Corn

Ingredients:

10 cups popped popcorn

1/2 cup unsalted butter

1/2 cup brown sugar, packed

1/4 cup light corn syrup

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1 1/2 cups mini marshmallows

Directions:

Pop the popcorn and place it in a large bowl, removing any unpopped kernels. Set aside.

In a medium saucepan over medium heat, melt the unsalted butter.

Stir in the brown sugar, corn syrup, and salt. Mix until everything is well combined and smooth.

Bring the mixture to a gentle boil. Once boiling, reduce the heat and stir constantly for 3–4 minutes to avoid burning and to thicken the mixture slightly.

Remove the saucepan from heat. Stir in the vanilla extract and mini marshmallows until they melt completely into a smooth, gooey caramel sauce.

Immediately pour the caramel mixture over the popcorn.

Using a large spoon or spatula, gently fold and stir the popcorn until all pieces are evenly coated.

Allow the caramel corn to cool slightly before serving. If you wish, shape the mixture into balls while still warm and soft.
