Savory Mongolian Ground Beef and Noodles

Ingredients:

1 pound ground beef
1 yellow onion, chopped
2 cloves garlic, minced
1 tbsp grated fresh ginger
1/4 cup soy sauce
1/4 cup brown sugar, packed
2 tbsp hoisin sauce
1 tbsp cornstarch
1/4 cup water
1/2 tsp red pepper flakes (or more, to taste!)
2 tbsp vegetable oil
8 oz egg noodles (or spaghetti, linguine – whatever you like!)
1/4 cup chopped green onions, for garnish
Sesame seeds, for garnish (optional)
1 cup chopped broccoli florets
1 red bell pepper, thinly sliced

Directions:

1. First, cook your noodles according to package directions. Drain and set aside.
2. While the noodles are cooking, heat the vegetable oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
3. Add the chopped onion, minced garlic, and grated ginger to the skillet. Cook for about 3-4 minutes, or until the onion is softened and fragrant.
4. In a small bowl, whisk together the soy sauce, brown sugar, hoisin sauce, cornstarch, water, and red pepper flakes.
5. Pour the sauce over the ground beef mixture and bring to a simmer. Cook for about 5 minutes, or until the sauce has thickened slightly.
6. Add the broccoli florets and sliced red bell pepper to the skillet. Cook for another 3-5 minutes, or until the vegetables are tender-crisp and heated through.
7. Add the cooked noodles to the skillet and toss to coat with the sauce.
8. Serve immediately, garnished with chopped green onions and sesame seeds (if using). Enjoy!
