Ingredients:
For the Sloppy Joe Filling:
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 pound ground beef (or turkey for a lighter option)
1 cup marinara sauce (or your favorite tomato-based sauce)
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon smoked paprika
Salt and pepper to taste
For the Burritos:
4 large flour tortillas
1 cup shredded cheddar cheese (or Mexican blend)
Β½ cup corn kernels (optional, for added sweetness)
ΒΌ cup chopped green onions (optional, for garnish)
For Grilling:
1 tablespoon butter, melted
Cooking spray or additional oil (for the grill)
Instructions:
Prepare the Sloppy Joe Filling:
SautΓ© Aromatics: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, and sautΓ© for 3β4 minutes, or until softened and fragrant.
Cook the Beef: Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned and fully cooked through, about 6β8 minutes. Drain any excess grease.
Add Sauce and Seasonings: Stir in the marinara sauce, brown sugar, Worcestershire sauce, smoked paprika, salt, and pepper. Simmer for 5β7 minutes, allowing the flavors to meld and the sauce to thicken slightly. Remove from heat and set aside.
Assemble the Burritos:
Warm the Tortillas: Warm the flour tortillas in a dry skillet or microwave for 10β15 seconds to make them pliable.
Layer the Fillings: Place a generous scoop of the sloppy joe mixture onto each tortilla, leaving a border around the edges. Sprinkle shredded cheese evenly over the filling. Add optional ingredients like corn kernels for extra flavor and texture.
Fold and Seal: Fold the sides of the tortilla inward, then roll it up tightly from the bottom to form a burrito. Repeat with the remaining tortillas.
Grill the Burritos:
Prep the Grill: Preheat a grill or grill pan over medium heat. Lightly brush the outside of each burrito with melted butter to help achieve a crispy, golden crust.
Grill to Perfection: Place the burritos seam-side down on the grill. Cook for 2β3 minutes per side, or until the tortillas are golden brown and crispy. Use a spatula to press gently while grilling to ensure even browning.
Serve and Enjoy:
Garnish and Serve: Slice the burritos in half diagonally for easy handling and serve with extra marinara sauce or sour cream on the side for dipping. Garnish with chopped green onions if desired.
