I needed a new snack and here it is. Grated mozzarella cheese with a pepperoni or two on top. Cook at 350 for 5 minutes then broil on high for 2 minutes. Once you start the broiler, don't step away. Let them sit up and get crunchy for ten minutes after you take them out of oven. One carb for every four chips. Dab them with a napkin to remove excess pepperoni oil. Extremely satisfying! Fyi-wanted to add, these are cooked on parchment paper on a baking sheet.
