This is an old-fashioned steamed bread. The molasses gives this bread a rich, nutty taste.
MOLASSES BREAD
1 cup All-Bran cereal
1/2 cup sugar
1 cup milk
1 tbsp. lemon juice
2 Tbsp. molasses
1 cup whole wheat flour
1 tsp. baking soda
1/4 tsp. salt
empty 26 oz. can
Mix cereal and sugar together. In a large mixing bowl combine milk, lemon juice, and molasses. Add bran mixture. Let stand 10 minutes. Whisk together the flour, baking soda, and salt. Stir into bran mixture. Grease 26 oz can. fill can with bread batter. Cover can tightly with foil. Place can in a large stockpot, fill pot with water that reaches half way up the can and cover with pot with a lid. Bring water to a boil and then reduce heat to med. low. Simmer for 90 minutes, checking the water level periodically and refilling as needed. Carefully remove the can from the pot. let rest 10 minutes. slide bread out onto a serving plate. Best served warm with butter or creamed cheese.
