Gooey Butterscotch Nut Bars
Ingredients:
- 1 package sugar cookie mix (17.5 oz)
- 1 package instant butterscotch pudding mix (3.4 oz)
- ½ cup butter, softened
- 1 egg
- 1 package caramels (14 oz)
- ½ cup evaporated milk
- 1 cup roasted macadamia nuts
- 1 cup roasted cashews
- 1 teaspoon vanilla extract
- 1 cup butterscotch chips
Directions:
1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan.
2. In a large bowl, combine the sugar cookie mix, instant butterscotch pudding mix, softened butter, and egg. Mix until well blended.
3. Press half of this dough evenly into the prepared baking pan.
4. In a microwave-safe bowl, combine caramels and evaporated milk. Microwave in 30-second intervals, stirring in between, until smooth.
5. Stir in roasted macadamia nuts, roasted cashews, and vanilla extract into the caramel mixture.
6. Spread the caramel and nut mixture evenly over the cookie dough layer in the baking pan.
7. Crumble the remaining cookie dough over the caramel layer.
8. Sprinkle butterscotch chips evenly on top.
9. Bake for 25-30 minutes or until the top is golden brown and the bars are set.
10. Allow bars to cool completely before cutting into squares.
