One-Pot Chicken Parmesan Mac & Cheese
Ingredients 🛒:
1 lb boneless chicken breast, cut into chunks
12 oz rotini or elbow macaroni
2 tbsp olive oil
2 cloves garlic, minced
2 cups chicken broth
1 cup milk
1 cup marinara sauce
2 cups shredded mozzarella cheese
1 cup shredded sharp cheddar
1/2 cup grated Parmesan cheese
Salt & black pepper to taste
Optional: chopped parsley & extra Parm for garnish
Directions 👩🍳:
Sear the Chicken:
In a large pot, heat olive oil over medium-high heat. Season chicken with salt and pepper and cook until browned. Remove and set aside.
Build the Base:
In the same pot, add garlic and sauté briefly. Stir in uncooked pasta, broth, milk, and marinara sauce. Bring to a boil, then reduce to a simmer.
Simmer the Pasta:
Cook pasta uncovered, stirring often, until tender and most of the liquid is absorbed (10–12 minutes).
Get Cheesy:
Stir in mozzarella, cheddar, and Parmesan until melty and creamy. Return chicken to the pot and toss everything together.
Finish & Serve:
Top with more Parmesan and a sprinkle of parsley if desired. Serve hot and gooey!
