2 chicken breasts

3β4 medium potatoes, peeled & cubed π₯
2 tbsp butter π§
ΒΌ cup milk (or more, as needed) π₯

1 cup frozen or fresh mix of peas, carrots & corn
1 tsp butter or olive oil

Boil potatoes until tender, then mash with butter, milk, salt, and pepper until smooth. While they cook, season chicken breasts with olive oil, garlic, salt, and pepper, and grill for 5β6 minutes per side until cooked through and nicely charred. In a separate pan, sautΓ© the mixed veggies with butter or oil for 4β5 minutes until warm and tender. Plate everything together: a scoop of mashed potatoes, sliced grilled chicken, and a colorful veggie medley. Sprinkle with extra black pepper if desired and enjoy!
