Pot Roast with Mashed Potatoes & Carrots
Ingredients:
2.5 lbs beef roast (chuck or brisket)
4 carrots, chopped
1 onion, chopped
3 garlic cloves, minced
2 cups beef broth
1 cup red wine (optional)
1 tbsp tomato paste
1 tsp thyme
Salt and pepper to taste
Oil for searing
For the mashed potatoes:
4 large potatoes, peeled and cooked
1/2 cup milk
2 tbsp butter
Salt to taste
Directions:
1. Sear the beef in a hot pot with oil until browned.
2. Add onion, garlic, and tomato paste. Cook 2–3 minutes.
3. Pour in wine (optional), broth, carrots, and thyme.
4. Cover and simmer for 2.5–3 hours until beef is tender.
5. Mash potatoes with milk, butter, and salt until creamy.
6. Serve pot roast over mashed potatoes with sauce on top.
