Ingredients (Makes 2 sandwiches)
4 slices sourdough bread, toasted (each about 2 oz or 35-40 g)
6 oz (180 g drained) canned tuna in brine, drained
ยผ small white or red onion, finely diced
1 heaped tsp wholegrain mustard
2.5 tbsp mayonnaise
1 cup grated cheese (Cheddar, Tasty, or your choice)
Salt & black pepper to taste
To Serve (Optional):
Gherkins or pickles
Sliced cucumber

1๏ธโฃ Prepare the Tuna Mixture
In a bowl, mix tuna, diced onion, wholegrain mustard, and mayonnaise.
Season with salt and black pepper to taste.
2๏ธโฃ Assemble the Sandwich
Preheat the oven broiler or use a toaster oven.
Place toasted sourdough slices on a baking sheet.
Spread tuna mixture evenly over two slices.
Sprinkle generously with grated cheese.
3๏ธโฃ Melt the Cheese
Place under the broiler for 2-3 minutes or until cheese is golden and bubbly.
Remove from oven and top with the remaining toasted bread slices.
