Baked Apple Fritters
Ingredients:
1 1/2 cups all-purpose flour
1/3 cup granulated sugar
1 1/2 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
2 large eggs
1/3 cup milk
2 tbsp unsalted butter, melted
1 tsp vanilla extract
1 1/2 cups peeled and finely chopped apples (Honeycrisp or Granny Smith)
Powdered sugar, for dusting
Directions:
Preheat oven to 375°F (190°C) and grease or line a muffin tin or baking sheet.
In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
In a separate bowl, whisk eggs, milk, melted butter, and vanilla until smooth.
Add wet ingredients to dry and stir until just combined. Fold in chopped apples.
Drop heaping spoonfuls of batter onto the prepared pan, shaping into fritter-style mounds.
Bake for 16–18 minutes, or until golden brown and a toothpick comes out clean.
Cool slightly, then dust generously with powdered sugar before serving.
