Lemon Raspberry Cheesecake Parfait 🍋
Ingredients:
8 oz cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla extract
1 cup heavy whipping cream
1/4 cup lemon juice
1 tsp lemon zest
1 cup fresh raspberries
1/2 cup graham cracker crumbs
1 tbsp melted butter
1 tbsp honey or sugar (optional, for raspberries)
Directions:
1️⃣ In a small bowl, mix graham cracker crumbs with melted butter. Stir until combined, then set aside.
2️⃣ In a mixing bowl, beat the softened cream cheese, powdered sugar, lemon juice, lemon zest, and vanilla extract until smooth.
3️⃣ In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold it into the cream cheese mixture.
4️⃣ If desired, lightly mash the raspberries with a bit of honey or sugar to enhance sweetness.
5️⃣ Assemble the parfaits: In serving glasses, layer graham cracker crumbs, cheesecake mixture, and raspberries. Repeat layers as needed.
6️⃣ Chill in the refrigerator for at least 30 minutes before serving.
7️⃣ Garnish with extra raspberries and a sprinkle of lemon zest before serving.
