Heavenly Raspberry White Chocolate Mousse Parfait
This decadent parfait is a symphony of flavors and textures, featuring a creamy white chocolate mousse layered with a tangy raspberry sauce and crunchy cookie crumbs. It's a light and refreshing yet indulgent dessert, perfect for any occasion.
Ingredients:
For the White Chocolate Mousse:
6 oz. high-quality white chocolate, chopped
1/4 cup heavy whipping cream
1 ½ cups heavy whipping cream, cold
1/4 cup powdered sugar
1 teaspoon vanilla extract
For the Raspberry Sauce:
1 cup fresh or frozen raspberries
2 tablespoons sugar
1 tablespoon lemon juice
Additional:
1 cup crushed graham crackers or cookies (vanilla wafers, shortbread, etc.)
Instructions:
Prepare the Raspberry Sauce:
Combine raspberries, sugar, and lemon juice in a small saucepan.
Cook over medium heat, stirring occasionally, until the raspberries break down and the mixture thickens into a sauce.
Strain the sauce through a fine-mesh sieve to remove the seeds. Set aside to cool completely.
Make the White Chocolate Mousse:
Place the chopped white chocolate in a heatproof bowl.
In a small saucepan, heat 1/4 cup heavy cream over medium-low heat until simmering.
Pour the hot cream over the chocolate and let it sit for a minute.
