Ingredients:

- 2 tbsp olive oil or vegan butter (30ml)
- 8 oz mushrooms, sliced (225g)
- 4 cloves garlic, minced
- 1 cup plant-based milk (such as oat milk or cashew milk)
- 1/2 cup vegetable broth (120ml)
- 1/4 cup nutritional yeast
- 2 tbsp soy sauce or tamari
- 1 tbsp lemon juice
- 1 tsp dried thyme
- 1/2 tsp black pepper
- Fresh parsley, chopped (for garnish)
- Vegan Parmesan cheese, for garnish (optional)

Directions:

1. Cook Udon Noodles: Cook udon noodles according to package directions. Drain and set aside.
2. SautΓ© Mushrooms and Garlic: Heat olive oil (or vegan butter) in a large skillet over medium heat. Add sliced mushrooms and cook until softened and browned, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.
