Blueberry Lemon Donuts
Ingredients:
1 cup all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup milk
1/4 cup Greek yogurt
1 egg
1 teaspoon vanilla extract
2 tablespoons melted butter
Zest of 1 lemon
1/2 cup fresh blueberries
Lemon Glaze:
1/2 cup powdered sugar
1 tablespoon lemon juice
Directions:
Preheat oven to 350°F (175°C) and grease a donut pan.
In a bowl, whisk together flour, sugar, baking powder, and salt.
In another bowl, mix milk, yogurt, egg, vanilla, melted butter, and lemon zest.
Combine the wet and dry ingredients, then gently fold in blueberries.
Spoon the batter into the donut pan, filling each mold about 3/4 full.
Bake for 12-15 minutes or until golden and a toothpick inserted comes out clean.
Let cool, then dip each donut into the lemon glaze.
Allow glaze to set before serving.

Tips:
Toss blueberries in a little flour before adding to the batter to prevent them from sinking.
