Flavorful Vegan Beef Bourguignon with Smooth Mashed Potatoes

Ingredients (Bourguignon):
- 1 tablespoon olive oil (15 ml)
- 1 large onion, chopped (200 grams)
- 2 carrots, peeled and chopped (150 grams)
- 2 celery stalks, chopped (100 grams)
- 8 oz cremini mushrooms, sliced (225 grams)
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- ½ teaspoon dried rosemary
- 1 bay leaf
- 3 cups vegetable broth (720 ml)
- 1 tablespoon tomato paste (15 ml)
- 1 tablespoon soy sauce (15 ml)
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- 14 oz can diced tomatoes (400 grams)
- 12 oz plant-based beef substitute, cubed (340 grams)
- Salt and pepper to taste
- Fresh parsley, chopped for garnish

Ingredients (Creamy Mash):
- 2 lbs Yukon Gold potatoes, peeled and quartered (900 grams)
- ½ cup unsweetened plant-based milk (120 ml)
- 2 tablespoons vegan butter
- Salt and pepper to taste

Directions (Bourguignon):
1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
2. Add mushrooms and cook until they release their liquid and start to brown, about 5 minutes.
3. Stir in garlic, thyme, and rosemary and cook for 1 minute more.
4. Add vegetable broth, tomato paste, soy sauce, bay leaf, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 15 minutes.
5. Stir in the plant-based beef substitute and simmer for another 15-20 minutes, or until the beef is tender and heated through.
6. Stir in the cornstarch slurry and cook until the sauce thickens slightly.
7. Season with salt and pepper to taste. Garnish with fresh parsley before serving.

Directions (Creamy Mash):
1. Place potatoes in a pot and cover with cold, salted water. Bring to a boil and cook until potatoes are tender, about 15-20 minutes.
2. Drain the potatoes and return them to the pot. Mash them using a potato masher.
3. Stir in plant-based milk and vegan butter until smooth and creamy.
4. Season with salt and pepper to taste.
